I know, I was shocked when I first heard it too.
The recipe is fairly clean, including natural ingredients without any butter, flour or oil.
Now, usually this scares me. I don't want my muffins to taste like applesauce and yogurt (trust me, been there done that)! These muffins genuinely taste like chocolate. Boo-yeah.
You can find the original recipe here!
| 1 3/4 cup | Oats |
| 3 | Egg whites |
| 3/4 cup | Unsweetened cocoa |
| 1/2 cup | Unsweetened applesauce |
| 1 tsp | Vanilla extract |
| 1/2 cup | Plain greek yogurt (or regular plain low fat yogurt) |
| 1/2 tsp | Cream of tartar (or 2 tsp. vinegar) |
| 1 1/2 tsp | Baking powder |
| 1 1/2 tsp | Baking soda |
| 1/4 tsp | Salt |
| 1 cup | Hot water |
| 1/2 cup | Baking stevia OR 1 cup sweetener of choice that measures like sugar 1 |
| 1/2 cup | Semi-sweet chocolate chips |
Because I didn't use the exact ingredients they used, I found similar and the muffins turned out just fine.
The recipe claims it will make 12 muffins, but I made about 15 average sized ones.
These muffins were easy to make (I only needed to use one bowl!), and were gone in my household within a day. Especially with my picky, "theres no way it can be healthy and delicious" sister, it seems like it would be a miracle.
Enjoy! xx
